Are two 512's are better than a 1 Gig stick? I've heard it was and I heard it wasn't. Also heard it didnt matter.

It is supposed to be more stable, but depending on the mobo the performance may be better with two sticks vs. 1..

Forget the question, dual channel so 2 is definately better...LOL

If it's dual channel, yeah, 2 sticks are a no-brainer.
