What is "super bypass" ? Is it something that a Gigabyte GA-7IX motherboard has ? If so, what are the advantages of it ?

Super Bypass allows memory transfers to "bypass" several of the queueing stages in the 751 northbridge. Generally you'll see a 10-15% gain in memory performance with it enabled. You will need a stepping 5 or 6 northbridge to enable super bypass. The 7IX is an old board so it probably has a stepping 3 northbridge (no super bypass). The later versions of WCPUID will tell you the stepping of the chipset.
edit: If there's no option to enable it in the BIOS then it's not available on your board.
