Not sure about the latest mobo's, but last year I got an Asus P5K-E/with WiFi. I have not updated the BIOS since everything works just fine. I also have a Q6600 and a 8800GT. I really don't see the point in overclocking anymore, since most systems now a days have lots of power. I'm more interested in stability than pushing components to see how far they can go. I know a guy at work with a Q6600 got his over 3GHz.

With the Q6600 about to be discontinued, the prices on them are going to be dropping like rocks.
Right now even before any discounts it's the best bang-for-the-buck quad core. Running a Q6600 with an 8800GT on my system and there's nothing it won't run smoothly.
I also expect to see Dell and other OEMs to deeply discount their Q6600 systems to move them out for the holidays.

I'm running an XFX 680i:

with my quad and an 8800GTS. It runs very well.
The 680i NVIDIA is a good chipset. I'm not sure how good the 780i is.

From the looks of things, I think the best value board is probably this:
ASUS P5N-D
