Yeah, I thought about using PATA drives, but the price is the same & I figured that I should be future compatible.

I have no RAID on my server (Server 2003 Standard). Wife's laptop and my Workstation all backup to the server nightly and anything really irreplaceable on the server (about 10Gb of photos & data) now is redundantly backed up automatically on Amazon S3 off-site backup using Jungle Disk nightly (costing me about $3 a month). Plus I make a DVD-DL data backup once a month and toss it in my walk-in safe deposit box.

My substantial collection of MP3s and Divx/XVid media is all redundantly backed up on DVD data discs so I don't feel any need to anything else with that. The videos are mostly TV shows - I don't keep Divx movies anymore as I prefer to have the DVD.

I do run Spinrite level 4 on my main workstation and server drives once every 6 months to pro actively avoid/detect hard drive failures. Since I started doing that a four years ago I haven't had a single HDD failure.

Yeah, I've seriously considered off site storate, however, I'd want in the hundreds of GB & in that case, it's just as well that I get another hard drive. I just don't have the patience to back up 100 DVDs worth of stuff (not that I hadn't considered that either).

I do, however, have most of my really important files & documents backed up in a remote location for my own peace of mind. Now that I think of it, I've only got about 9 gb of photos, might put those on DVD to be safe.
