Quick Question.. Can I hook a switch up to this AP and then run more than one device off of it? Or do I have to have an AP for each device that I'm using like this?

No sure I understand your question. This is an AP only. You can run as many wireless PCs off it up to the limit which is probably 32 or more.
If you want to add a switch to connect more hardwired devices, then yes, assuming that your AP is connected to a router or modem/router. If so, you can put a switch between the router and the AP and connect more PCs to it, sure.
