How should I set this up? New stuff!

Ok,
I am gutting my system for the last time
(I hope)
I want the CD burner and DVD burner and 2 hard drives. Here's what I got
Iwill XP333 system board. 60gig maxtor, 80 gig WD, 120gig Maxtor (got it today), Corsair 512drr and a 256drr. ATI 7500 Radeon AIW, liteon 52x24x52, toshiba DVDV-r burner.
I plan to use this system for capturing and editing videos. Rendering animation also if I ever get started back into it
WHat's the sugestions for best performance? Use the 60gig as Fat32, and the 120 as ntfs (files over 4gig).
Should I put both hardrives on the first cable and both burners in the secondary. Or should I put one each on each cable? I will be tranfering files from drive to drive often and also copying disks alot. (Got some people wanting home movies on VCD, after the first master I have to make lots of copies later)
I normally use the whole hardrive as one partition. I been reading what everyones saying about a smaller O/s partion and think I'll do that. How big should an O/s partion be? About 6-8 gigs? I plan to keep it well ghosted
I'll be running 2k on it.
Also on the 120gig drive, I am thinking of 2 partitions both 60gigs. One for capturing and editing that I can erase often and the other partition to store the completed videos. If I just delete everything form the working partition when I get done with a project I shouldn't have to defrag it. And the storage partition should hold about 12 or more full videos. That sound about right?
Any sugestions?
And for now I am still running a XP1700 cpu.
Also, I plan to upgrade the system board and cpu to a 333fsb in a few months. Last I saw a 2500 333fsb was going for about $125. I am waiting till it drops to the $99 range. Haven't decided which mainboard I will buy then.
