Recovering Outlook files & Small Business Server

I have a client running Small Business Server 4.5 and have a concern about disaster recovery.
My concern is being able to access the Outlook calendar files on a workstation from a backup in case the server goes down.
In an emergency I can always throw the shared office files on any workstation and share them - that will get them back up and running until the server is repaired or a loaner is setup.
HOWEVER the client is VERY dependent on Outlook for scheduling. I was wondering if anyone knew of a trick to access the calendar files temporarily on a workstation by accessing a backup copy of the server's user files.
I personally hate Outlook - makes things complicated. If they were using Lotus Organizer there would just be a single shared organizer file on the server.
