I reccomend Linux Administration, A Beginners Guide from the Network Professionals Library written by Steve Shaw. I also reccomend you research the Linux Documentation Project. located at

O'Rielly makes a Learning Red Hat Linux book that is fairly "newbie-ized".

I own the RH Bible for 6.2 and it is a very good book to help with the understanding of linux as a whole, but it does not have much in the way of administration.
