All practical effects. No CGI, and all actors were actually in the planes and had to be trained sustain 8 Gs according to this interview:

looks good to me...he even said the movie is basically an homage to aviation above all else. i'm surprised Cruise didn't insist on piloting everything in real time as well...hahaha
